Stellenrust Cape Wildling Chardonnay 2023 is a premium Chardonnay from the highest vineyard in the Bottelary Hills, planted on unique limestone soil. It is fermented with wild yeasts in oak barrels (30% new) for 9 months, developing a rich texture and butterscotch notes. The nose offers ripe citrus and toasted almond, while the palate is concentrated, with nectarine flavors and a long, mineral finish. Its lively acidity promises elegant aging. Serve at 10-12°C. Pairs beautifully with sea bass fillet with butter sauce, sage ravioli, or aged yellow cheeses, where its creamy texture complements richness.
