Salers Gentiane is the oldest gentian aperitif, born in Correze, France, in 1885. This iconic liqueur is crafted from yellow gentian roots, which are manually harvested (respecting the Auvergne ecosystem) from the slopes of Puy Mary. The meticulous production involves washing and crushing the roots, followed by several weeks of alcohol maceration and a subsequent bain-marie distillation in copper stills. The distillate is blended with a secret bouquet of botanicals and matured for over three years in Limousin oak vats, delivering its characteristic bitterness!
