The Kilchoman Genesis series chronicles the 1,130-day journey from barley harvest to bottle, with each stage highlighting a distinct phase in whisky production. Stage 3, known as "Peating," focuses on days 13 and 14, during which the barley undergoes the peating process. Kilchoman's 2024 Sauternes Cask Matured is a limited-edition release from the renowned Islay distillery. This expression spent a minimum of five years maturing exclusively in fresh and refill Sauternes sweet wine casks, handpicked by Kilchoman founder Anthony Wills.

Kilchoman Small Batch Bourbon & Oloroso & Cognac is a single malt whisky from the Isle of Islay that captures Kilchoman's signature peaty spirit, elevated by a more intricate maturation plan. The spirit is matured in a blended mix of casks - approximately 70% ex-bourbon barrels, 5% oloroso sherry casks, and 25% casks that previously held cognac - resulting in a whisky with a balanced interplay of smoke, sweetness and depth.
