    Piedirosso is a rare and ancient variety found mainly in Campania, Italy and means "red feet". After aging for 6 months in barrique barrels and staying for 1 year in the bottle, it gives us a beautiful ruby red wine. To our nose it reveals complex aromas of cherry, plum and raspberry, slightly spicy. In the mouth, it is pleasant, smooth, slightly salty and velvety. It has an aftertaste with moderate length and persistence. Accompany pasta or rice in tomato sauce or with ragout, red and white meats such as rabbit, vegetable soups with legumes, fish soups, cured meats and not very mature cheeses.

After fermentation, the wine is placed in Slavonic oak barrels where it evolves and ages under strict control for at least two years.

    The lively and elegant "Metodo Classico Etna Rose" better explores the character of Etna. It is produced 100% from the Nerello Mascalese variety in the Etna area - Contrada Dafara Galluzzo (Rovittello - Castiglione di Sicilia) at an altitude of 700 m. The wine remains in contact with the fine lees for several months before being bottled. After re-fermentation, Chiuse finds its own balance remaining 44 months in the bottle. The slow process of staying on the lees gives body to the wine and creates the sophisticated tertiary aromas.

    It is produced in the Etna DOC area (Rovittello-Contrada Dafara Galluzzo) from Nerello Mascalese and Nerello Cappuccio grapes that are harvested by hand in mid-October at an altitude of 700 m. After vinification it matures for 18 months in large 500l oak barrels. Chiuse in Italian is what Clos in France (closed vineyard), is the best and truest expression of the Etna cru known as Contrade. The stone walls, part of the Unesco World Heritage, define the ancient borders of our vineyards. Chiuse Vidalba is a selection of older bush vines Nerello Mascalese and Nerello Cappuccio from our low yield organic vineyard Contrada Dafara Galluzzo located in Rovittello on the northern slope of the volcano.
